Veggie chili burritos

6 Large white or brown tortillas
200g White rice
1 Large white onion
4 Medium sized White mushrooms
2 Garlic cloves
1 Can black beans
1 Can kidney beans
35g Fajita seasoning
100ml Milk (Rice, oat or soya)
1 Red bell pepper
10-30g Chilli powder (Depending on how spicy you want it)

Most local supermarkets will sell plant based alternatives to dairy and meat products or try your local health food specialist store.

1. Cook the rice according to instructions on pack. Chop the onion, mushrooms, garlic & bell pepper then start to fry on a medium heat in a small amount of oil.

2. Drain the beans and when the onion has started to brown add the beans to the frying pan.

3. Add all of the seasoning, chilli powder & milk, stir then reduce heat and leave to simmer for 10 minutes. (Add milk gradually until you reach the desired thickness of sauce)

4. Heat the tortillas and fill with your veggie chilli on a bed of lettuce & rice. Wrap & enjoy!
