Mini pizza rolls with Cheddar "Cheese"

Puff pastry (Jus Rol Ready Rolled 320G)
Tomato puree
200g Bute Island dairy free Grated cheddar sheese (Mild) (or any cheese)
Extra virgin olive oil
20-30g Flour to help roll

This is SO easy you'll kick yourself for not thinking of it before.

1. Roll out the pastry and cut in half length ways including the paper (The longest way).

2. Cover the pastry with tomato puree (or your preferred pizza sauce).

3. Cover one half of each pastry sheet with cheese then fold each piece over making sure the pastry over laps slightly to form the seal whilst slowly removing the paper at the same time. (You should now have two rolls/tubes of pastry filled with sauce and cheese)

4. Gently roll the pastry to form a nice roll shape ensuring the seal is on the bottom. Now cut pastry into mini rolls about an inch thick and you should end up with about 24.

5. Place on a non stick baking tray, drizzle with extra virgin olive oil and bake on 200 for 12-15 mins or until brown. (Beware, the cheese will ooze out!)
