Classic pancakes with syrup

300g Flour
30g Baking powder 30g Sugar
1 Teaspoon salt
100-200ml Milk (Soya, rice or oat)
2 Tablespoons oil
1 Lemon
Syrup (Maple or chocolate)
*Adjust amount of ingredients to suit the number of portions

1. Mix the flour, sugar, baking powder and salt in a bowl, stir thoroughly.

2. Slowly mix in the milk and oil until you have a smooth batter. You want a nice thick texture so you may not need all of the milk.

3. Now in a pre heated frying pan or oiled griddle, pour batter into the centre slowly until you have the size of pancake you want (this can make a few large or several small pancakes)

4. When the batter starts to bubble, gently lift the edge to see if it has started to brown, turn over if it has.

5. Serve when slightly browning on both sides then sprinkle with sugar, fresh lemon juice and add your syrup topping.
