BBQ Shredded Jackfruit fajita tacos

4 Soft shell tacos
35g Fajita seasoning
1 Tin jackfruit
1 Small onion
1 Garlic clove
100ml BBQ sauce
100ml Vegan milk
2-3 Salad tomatoes
1 Red bell pepper
1 Lime
1 Spring onion
50ml Tomato puree

*Adjust amount of ingredients to suit the number of portions

1. Drain the jackfruit and place in cold water with a pinch of salt. Chop the onion and garlic and start to fry in a pan.

2. After a few minutes add the fajita seasoning, milk, BBQ sauce, puree and some salt. Drain the jackfruit and place in the pan with about two fingers of water then place on low-medium heat and simmer for 30 minutes. Make sure to cover with foil.

3. Check the thickness of the sauce every so often, add water/milk if too thick. After about 30 minutes take two forks and start to rip/shred at the jackfruit and it should start to come apart. Do this as much as you want until you reach the desired texture.

4. Chop the salad ingredients and place in heated taco shells, fill with BBQ shredded jack fruit then sprinkle fresh lime and spring onion over the top. ENJOY!
